还原桔烧巴、糖醋软溜草、雄黄岛粉、软鲟粥等几近失传的闽菜,创立的闽菜馆入选首批30家重点“闽菜馆”创建单位……福建省餐饮文化促进会常务副会长、闽菜文化推广专业委员会主席林津,用自己的行动承担起了推广宣传闽菜的责任。近日,记者采访了她。

林津是“鼎鼎肉松”发明者林鼎鼎的第五代后人。因为是官厨之后,从小生活在三坊七巷,外婆又善于烹饪,地道美味的闽菜填满了林津的童年。

2008年,林津的外婆去世,记忆中闽菜的味道越来越淡。看到外地游客对地道福州菜的认知大多停留在荔枝肉、南煎肝、爆炒双脆等菜品上面,她有了创立品牌闽菜馆的想法。

2017年,林津创立本土闽菜品牌“夕时闽味餐厅”,主营地道福州菜。她要求,“夕时”的厨师长必须是地道的福州人,年龄要在50岁以上,并有长期当民间乡厨的经历。

开业之初,餐厅专门找依伯依姆聊天,收集他们记忆中的福州味道,并邀他们参与菜品的打磨。如今,“夕时”的菜谱中已有100道福州菜,其中包括桔烧巴、糖醋软溜草、雄黄岛粉、软鲟粥等几近失传的闽菜。

林津说,推广宣传闽菜是她的责任。去年12月,“夕时”参加了“全球NEW闽菜馆 123亮灯”仪式。“当时超过25个国家和地区的近300家知名闽菜馆同步亮灯,助力闽菜走向全国、走向世界。”

林津将位于三坊七巷旁的夕时意境闽味餐厅,定义为福州的城市会客厅。这里采用新中式装修,装饰陈列有寿山石、脱胎漆器等,并融入酒、茶、咖啡等元素,让闽菜宣传的形式更加多样。

“去年福建省商务厅出台《促进闽菜繁荣三年行动方案》,旨在进一步促进闽菜振兴和繁荣,让致力于闽菜推广宣传的人有了更强的动力。”林津说,希望用一道道菜传递闽菜文化,表达对故土的深情。

本案设计运用了新中式设计并非传统意义上的复古明清,而是通过中式风格的特征,取其“雅”的精髓,加以融入现代风格的设计,以表达对清雅含蓄、端庄丰华的东方式精神境界的追求。

造型上——留白

以简单的直线线条体现新中式风格的朴素简洁。新中式风格的家具更加的注重线条的装饰,摒弃了传统家具较为复杂的雕刻纹样,质地以实木为主。在家具的设计与功能上,也进行了相应的优化。

汲取中国古典园林设计内涵,移步换景、因景互借,从而营造出曲婉深邃的空间意境之美。中式屏风或窗棂隔断视线,以曲径通幽的视觉美感令中式空间曲折之间极尽幽玄之意。

在新中式风格的设计中,追求的是一个“雅”字。新中式风格的色彩主要以黑色和白色为主。传统书法自身具有隽永的艺术魅力,其作为中式室内陈设之品,是提升空间文化韵味和体现空间文雅意境的极佳装饰。

书法本身就是奇佳的造景元素,中式空间因书法而增添文雅气息,书法也因中式空间的烘托得以显示回味无穷的艺术魅力。而不同书风又需适宜不同体裁,如选诗词,字宜飘逸;如选槛联,字宜苍劲;如选匾额,字宜丰腆雄伟。
