Tonghuashan wine production mainly relies on mountain grape producing areas such as Liuhe, Ji'an and Meihe.

Liuhe Mountain Grape Quality Technical Requirements (1) Variety. “Double Excellent”, “Double Red”, “Left Excellent Red”, “North Ice Red”, “Community No. 1” and other mountain grape varieties approved by the relevant departments of geographical indication protection. (2) Site conditions. The altitude of the protected area is 300 to 800 meters above sea level, loam or sandy loam soil, the thickness of the soil layer is not less than 60 cm, the pH value is between 5.5 and 7.0, and the soil organic matter content is more than 3.0%. (3) Cultivation management. 1. Seedling breeding: grafting or cutting seedlings are used. 2. Colonization: (1) Colonization time: from late April to early May. (2) Planting density: ≤ 4,950 plants per hectare. 3. Rack type: in the form of a fence rack. 4. Fertilization: Mainly organic fertilizer. The annual application rate per hectare is ≥60m3. 5. Yield control: ≤22,500 kg per hectare. 6. Environmental and safety requirements: The use of pesticides and fertilizers must comply with relevant national regulations. (4) Harvesting. 1. Requirements before harvest: Any pesticide is banned 20 days before harvest. It is forbidden to water the mountain grapes 10 days before harvesting. 2. Harvesting time: When the Liuheshan grape reaches the following indicators in the middle and late September, the harvesting is carried out: Zuoyouhong, Beibinghong soluble solid content ≥16%; Shuangyou, Shuanghong soluble solid content ≥15%; The content of soluble solids in brewing No. 1 is ≥14%. (5) Quality characteristics. 1. Sensory characteristics: The ear is long conical, the fruit is small, the average grain weight is 1.38g, the color is thick, the pigment is high, the fruit powder is thick, the fruit is purple black or blue black, the juice is ruby ​​red, sweet and sour taste, and there are rich mountain grapes. Clear fragrance. 2. Physical and chemical indicators: (1) Total acid content: Zuoyouhong ≥ 0.74%, double excellent ≥ 1.74%, double red ≥ 1.43%, and the first brew ≥ 1.48%. (2) Resveratrol: Zuoyouhong ≥0.62 mg/kg, Shuangyou ≥0.38mg/kg, Double Red≥8.26 mg/kg, and Gongye No.1≥1.67mg/kg. 3. Safety requirements: Product safety indicators must meet the relevant regulations of the state for similar products.
