The founder of Quanjude was named Yang Quanren (the word Shoushan), and his hometown was in Jizhou, Zhili (now Hebei). During the Xianfeng period of the Qing Dynasty, due to flooding in his hometown, Yang Quanren and his fellow villagers left their homes together, came to live outside the front gate of the capital, fed chickens and ducks by the moat, and sold them along Qianmen Street.


In the three years of Tongzhi (1864), on Qianmen Street, there was a dry and fresh fruit shop called "De Ju Quan", which was about to fail due to poor management. Every day, Yang Quanren's chickens and ducks that are going to be sold will pass by the door of this store. Yang Quanren learned that the "De Ju Quan" dry and fresh fruit shop will be closed and decided to set up this shop and start the roast duck roast meat business. But he was worried about the bad Feng Shui here, so he invited a gentleman to check the Feng Shui in this shop.


Mr. Feng Shui turned around the alley and said to Yang Quanren: "This is a treasure of Feng Shui. It's a pity that the original shopkeeper didn't manage well." Yang Quanren was secretly happy after listening to his heart. Mr. Fengshui then told him: "The meat market alley here and the Jinger alley behind are like two car poles. If the small shop is turned into a two-storey building in the future, it will be like an eight-lift big car, and the business will definitely be booming." "What size does the small furnace lay?" Yang Quanren asked. Mr. Feng Shui told Yang Quanren: "You can reverse the three words" De Ju Quan "and call it" Quan Ju De ", then you can go to its guts and embark on a smooth journey, and the business will be prosperous." After he had the font size, Yang Quanren invited Xiucai Qian Zilong (No. Yungu) to write three large characters of "Quan Jude" for him to make a plaque, and made a black background gold plaque to hang on the lintel of the shop. On July 9, 1864 (the sixth day of the sixth month of the lunar calendar), Quanjude opened with a loud sound of firecrackers.


Under the careful management of Yang Quanren, Quanjude's business is flourishing. Yang Quanren is savvy and capable. He knows that restaurants need people's clothes and rely on halls, cabinets and kitchens. Therefore, he often went to various roast duck shops to explore the secrets of roast ducks and search for roast duck masters.


Once, Quanquan Yang learned that there was a teacher named Sun at the Jinhua Pavilion, which specializes in cooking roast duck for the palace. His roast duck technology is very superb, and people familiar with him like to call him Sun Xiaozhu. After learning the news, Yang Quanren tried every possible way to find opportunities, "close to him", and often asked him to drink and play chess, and the relationship between them became closer and closer. Finally, Kung Fu was not disheartened. Master Sun was persuaded by Yang Quanren, and he was hired to Quanjude after paying a lot of money.


Quan Jude hired Master Sun, which is equivalent to mastering all the techniques of Qing Dynasty roast duck. Master Sun changed the original roaster to a large stove with a deep hearth and a roaster that can roast a dozen ducks in one furnace. You can also roast one side and one side to continue the duck.
