The famous chef Umberto Bombana, who enjoys the reputation of "the king of white truffles", has always maintained the principle of respecting food as a chefs, adhering to the creativity of traditional cooking styles and leading the Michelin 3-star Italian restaurant, 8, Otto e Mezzo BOMBANA, to become a famous star restaurant in the world.






Born in Bergamo, northern Italy, chef bombana studied cooking in Centro di formazione alberghiera. From the beginning of his apprenticeship, he has become an apprentice of Ezio Santin, a famous chef in Antica Osteria Del Ponte, a star rated restaurant in Michelin, Italy. In 1983, he joined Rex IL Ristorante, a famous restaurant in Los Angeles. His simple and exquisite cooking style was highly praised. Rex IL Ristorante is owned by Mauro Vincenti and is the designated venue for the annual Oscars celebration. In addition, chef bombana has worked with several famous chefs, such as Gianfranco VISSANI, Michel rostang and pinuccio Alia, to gradually establish his own unique cooking concept.






In 1993, chef bombana was invited to join the Ritz Carlson hotel to manage Toscana, an Italian restaurant. In the early days of its opening, the restaurant has become an indicator of high-end restaurants. His enthusiasm for cooking and his respect for ingredients have made Toscana, which has been in operation for 15 years, become an immortal legend in the catering industry of Hong Kong. During his tenure, chef bombana visited the group's overseas hotels, including lagoon, Boston, Osaka, Seoul and Singapore. Chef bombana's outstanding achievements have long been recognized. In 2002, he was awarded the "best Italian cuisine chef in Asia" by the Italian Culinary Institute for foreigners (ICIF); in 2006, he was appointed "white truffle world ambassador" by Piedmontese regional enoteca Cavour of Italy.






In 2008, chef bombana officially launched his personal cooking business with the closure of Ritz Carlson Hotel and Toscana. In 2010, chef bombana opened its own door to open 8% Otto e mezzo bombana. The name of the restaurant was conceived by chef bombana himself. He was fond of the art of film. He took the name of the autobiographical film 8 / 2, which was made by Italian palace director Federico Fellini in 1963, as the name of the restaurant. He paid homage to the film master and was also a symbol of the combination of Italian life style and art. In December of the same year, 8 / 2 Otto e mezzo bombana won the Michelin Guide Hong Kong and Macao 2011 as a two-star restaurant for the first time. Since 2011, it has been the first and only Italian restaurant that has been awarded Michelin 3-star outside Italy for 5 consecutive years.






Chef bombana's culinary business is based in Hong Kong and later expanded to the mainland market in China. In 2012, chef bombana opened 8% Otto e mezzo bombana Shanghai in Shanghai and opera bombana in Beijing in 2013. In December 2013, chef bombana opened the first boutique Italian market style restaurant ciak – in the kitchen in Hong Kong, creating an alternative Italian food trend. Chef bombana's catering business map was extended to Macao in 2015, and 8% Otto e mezzo bombana Galaxy Macau was opened. It has collected the top local ingredients from all over the world, and meticulously created exquisite Italian cuisine for Macao's food industry. Subsequently, ciak – all day Italian was opened in Taikoo city center to further promote Italian market style catering culture.
