Jiaji duck

Jiaji Duck is abundant in Jiaji Town, Qionghai City, Hainan Province. It is one of the four famous dishes in Hainan. According to legend, Jiaji Duck is a good-breed duck imported from Malaysia by overseas Chinese more than 300 years ago. It has a flat shape, red crown and yellow pheasant, and black and white feathers. It is large, thin, soft, tender, and low in fat. It is fat and not greasy, and has high nutritional value. Therefore, the ducks raised by Jiaji are called Jiaji ducks.

The folks regard the Jiaji duck as a tonic food. Take the Cordyceps together and cook it. The nourishing effect is even greater. For example, with the glutinous rice boiled duck porridge, it has the functions of nourishing the stomach, nourishing the blood, and nourishing the body. When it comes to enjoying Jiaji duck, the seasoning is also particularly particular: use the duck soup to rush into the garlic, ginger, squeeze into the orange juice, add salt, sugar, chili sauce. In general, Jiaji duck has three kinds of food methods: white peony, plate duck and roast duck. However, it is most famous for its "white peony" which can best reflect the original flavor.
